PORK CHOPS & APPLESAUCE

INGREDIENTS:
 
6 pork chops
1 cup applesauce
1/4 cup soy sauce
1/4 tsp dried minced onion
salt and pepper to taste
 
DIRECTIONS:
 
Brown chops in skillet and put in baking dish. Mix together applesauce, soy sauce and onion. Spoon 1/2 of this mixture on chops. Bake 20 minutes in a 350 degree oven, turn chops and spoon on remainder of sauce. Return to oven for another 20 minutes.



MONGOLIAN PORK ROAST

INGREDIENTS:

2 lb. pork roast
1 tsp. minced garlic
2 tbsp. olive oil
¼ tsp. ginger
¼ tsp. thyme
½ tsp. lemon pepper
SAUCE: ¼ cup each of olive oil, light corn syrup, soy sauce

DIRECTIONS:

Fire up the oven to 350 degrees. Place the pork roast in a shallow baking dish, then mix together garlic, oil, ginger, thyme and lemon pepper. Spoon mixture evenly on both sides of the pork roast. Stir together (or use a shaker) the ingredients for the sauce - olive oil, light corn syrup and soy sauce - and pour half of it over the pork roast, reserving the other half. Bake for one hour (approximately 30 minutes per pound of meat) basting occasionally.

SAUCY NOTES: I use the remaining half of the sauce to saute fresh vegetables, like green beans, mushroom and carrots (3-5 minutes). I also use this same sauce and add a few seasonings like ginger and lemon pepper, to marinate London broil, ribeye steaks, chicken, etc.



PORK CHOPS & PEACHES

INGREDIENTS:

4-6 pork chops (boneless, approx. 1/2" thick)
1 can cinnamon flavored peaches-drained (I use Del Monte)
1-2 tbsp vegetable oil
salt & pepper to taste

DIRECTIONS:

Brown pork chops on both sides in oil heated to medium high in a skillet. Top with peaches (drained), add salt & pepper, cover and simmer for 30 minutes.

NOTE: Can use any type of canned fruit and add 1/2 tsp of cinnamon or ground cloves if not already flavored.



ORANGE GLAZED PORK CHOPS

6 medium sized pork loin chops
1/2 cup Sue Bee Honey
1 cup orange marmalade
1/2 cup brown sugar
lemon pepper

Season pork chops with lemon pepper and place in a 9x13-inch baking dish. Whisk together remaining ingredients. Coat top of pork chops with half of glaze mixture and bake at 350 degrees for about 20 minutes. Turn pork chops and cover with remaining mixture. Continue baking another 20 to 30 minutes or until pork chops are done. Makes 6 servings.
