INGREDIENTS:

can (8 oz. whole berry cranberry sauce
1
1/2 tsp. butter
2
tbsp. brown sugar
1
can (13 1/2 oz.) pineapple tidbits, well drained
1
frying chicken (2 1/2 to 3 lbs.) quartered
DIRECTIONS:
Combine
cranberry sauce, butter, brown sugar and pineapple. Arrange chicken
quarters in 12 x 8 x 2 inch dish. Pour cranberry-pineapple sauce over
chicken. Place dish in microwave oven and cook 18 to 20 minutes,
giving dish 1/2 turn after 10 minutes. Makes 4 servings.

NEW
DILL POTATOES
INGREDIENTS:
1-1/2
pounds small new potatoes
1/4
cup chopped green onions
1
tablespoon chopped parsley
1/4
teaspoon dried dill weed
2
teaspoons margarine, melted
DIRECTIONS:
Leave
peeling on potatoes and poke a few holes in each one with a fork.
Place potatoes in a microwave-safe dish. Add green onions, parsley
and dill weed and toss together. Cover tightly and nuke on high (100
percent) 6 to 8 minutes, or until potatoes are fork-tender, stirring
once. Add margarine to potatoes and mix well to coat.

MICROWAVE
MEATLOAF
INGREDIENTS:

oz. can tomato sauce
¼
cup brown sugar
1
tsp. prepared mustard
2
eggs
2
lbs. ground beef or turkey
1
tbsp. minced onion (or medium onion, minced)
¼
cup bread or cracker crumbs
1
tsp. salt
DIRECTIONS:
Mix
together the tomato sauce, brown sugar and mustard in a small bowl,
then set aside. In a large mixing bowl lightly beat the eggs, then
add the ground beef, minced onion, bread crumbs, salt and half of the
tomato sauce mixture, reserving the other half. Thoroughly mix
together - I prefer to use my hands, but some folks are squeamish
about that, and if so, use a spoon or fork to mix well. Then put the
meat mix in a 2-quart microwave-safe casserole dish and pour
remaining tomato sauce on top. Cook uncovered on high/maximum power
for 12-14 minutes. Let stand covered for an additional 10 minutes
before serving.

CHEESY

INGREDIENTS:

tbsp. butter or margarine - melted and divided

cup crushed cheese-flavored snack crackers
¼
tsp. pepper
4
boneless, skinless chicken breast halves
½
cup sour cream
DIRECTIONS:
Place
1 tbsp. of butter in an 11x7x2" microwave safe dish and set
aside. Combine cracker crumbs and pepper. Dip chicken in remaining
butter, then spread with sour cream. Roll in crumb mixture. Place in
prepared dish and cover loosely. Microwave on high for 6-7 minutes or
until chicken juices run clear. Let stand for 5-10 minutes before serving.

IN THE MICROWAVE
INGREDIENTS:
1
box spice cake mix (or yellow cake mix if you don't care for spice)
1
20 oz. can apple pie filling
4
eggs
DIRECTIONS:
You
can mix this in a bowl or right in a microwaveable bundt pan.
Mix
all of the ingredients in a bowl or a greased (I use Pam)
microwaveable bundt pan. Bake at high power for 5 minutes and on 50%
power for 5 minutes. The top will be a little wet looking. It should
be firm to touch, like a cake baked in a conventional oven. It will
continue to cook after you take in out of the microwave. Don't
overcook. Let cake sit for 5 minutes and then turn out on plate.
You
can frost with powdered sugar or your favorite frosting.
