Orange
Ginger Green Beans
1 pound green beans
1 tbsp. trans-free margarine
1/2 cup chopped shallots
1 tbsp. finely
chopped fresh ginger
1/2 tsp. grated
orange peel
Bring a medium
saucepan of water to a boil over medium-high heat. Add the beans,
cover, and simmer for 5 minutes, or until tender. Drain and remove to
a bowl.
Melt the margarine
in the same pan over low heat. Add the shallots and ginger and
sauté for 5 minutes, or until the shallots are tender. Add the
beans and orange peel and toss to combine.
Makes 8 servings
