SUSAN'S SOUTHERN PECAN PIE

INGREDIENTS:

3 eggs
2/3 cup sugar
1 cup pecans
1 cup dark corn syrup
1/3 cup melted butter
1 unbaked pie shell
dash salt

DIRECTIONS:

Beat eggs thoroughly with sugar, salt, corn syrup, and melted butter. Add pecans and pour into unbaked pastry shell. Bake in moderate over (350) 50 minutes or till knife inserted halfway between outside and center of filling comes out clean. Cool pie before serving....

APPLE-MINCEMEAT PIE

INGREDIENTS:

1 (9 oz.) pkg. condensed mincemeat, crumbled
1 cup apple juice
1 large cooking apples, peeled and thinly sliced
1 unbaked 9-inch pastry shell
1 /4 cup all-purpose flour
1 /4 cup firmly packed brown sugar
1 /3 cup chopped walnuts
1 tsp. ground cinnamon
1 tbsp. butter or margarine, softened

DIRECTIONS:

Combine mincemeat and juice, and cook over medium heat, stirring constantly, until mixture thickens and comes to a boil. Cook 1 minute, stirring occasionally. Remove from heat; cool. Arrange apples in pastry shell; top with mincemeat mixture. Combine flour, sugar, walnuts and cinnamon in mixing bowl; cut in butter with a pastry blender until mixture resembles coarse meal. Sprinkle over mincemeat. Bake at 425 degrees for 25 minutes.

BLESSING MIX

*Each ingredient in this snack mix symbolizes something associated with Thanksgiving.

2 cups Bugles brand corn snacks - shaped as a cornucopia, a horn of plenty.
2 cups pretzels - represent arms folded in thanks and prayer.
1 cup candy corn - during the first winter, the Pilgrims were each allotted only 5 kernels of corn per day because food was so scarce.
1 cup dried or candy fruits - Thanksgiving is the celebration of the harvest.
1 cup peanuts or sunflower seeds - seeds represent the potential of a bounteous harvest for the next season if they are planted and well tended.

In a large bowl mix all ingredients together. Other ingredients such as dry cereals, candies, or marshmallows can also be added. Make this mix as a family and eat while discussing each ingredient and how it relates to Thanksgiving.

EASY COCONUT CUSTARD PIE

INGREDIENTS:

1 cup sugar
2 tbsp. all purpose flour
2 eggs
½ stick butter or margarine, melted
1 cup milk
1 tsp. vanilla
1 6oz. package coconut

DIRECTIONS:

Mix together all ingredients well. Pour into a 9" unbaked pie shell. Bake for 45 minutes at 350 degrees, or until crust is brown and custard is firm.

HARVEST PUMPKIN TARTS

INGREDIENTS:

1 (14-ounce) can Eagle® Brand Regular or Low Fat Sweetened Condensed Milk
(NOT evaporated milk)
1 1/4 cup canned pumpkin
2 tablespoons brown sugar
1 egg
1/4 teaspoon each - ground cinnamon and nutmeg
24 3-inch unbaked tart shells

DIRECTIONS:

Whisk together Eagle® Brand, pumpkin, brown sugar, egg, cinnamon and nutmeg. Pour evenly into tart shells. Bake in preheated 375° oven for 18 minutes or until center is just set and pastry is golden. Cool and garnish as desired.

MINI FRUIT CAKES

INGREDIENTS:

1 can Eagle Brand condensed milk
3 cups coconut
1 lb chopped dates
1 cup chopped nuts
Maraschino cherries

DIRECTIONS:

Mix all ingredients together and pack into well greased, floured muffin tins. Top each with a cherry. Bake at 375 degrees about 20 minutes or until lightly brown. Store in covered container - improves with age.

PUMPKIN CRUNCH CAKE

INGREDIENTS

1 pkg. (18.25 oz.) yellow cake mix, divided
2 large eggs
1 2/3 cups LIBBY'S® Easy Pumpkin Pie Mix
2 teaspoons pumpkin pie spice
1/3 cup flaked coconut
1/4 cup chopped nuts
3 tablespoons butter or margarine, softened

DIRECTIONS:

PREHEAT oven to 350° F. Grease 13 x 9-inch baking pan.

COMBINE 3 cups cake mix, eggs, pumpkin pie mix and pumpkin pie spice in large mixer bowl. Beat on low speed until moistened. Beat on medium speed for 2 minutes. Pour into prepared pan.

COMBINE remaining cake mix, coconut and nuts in small bowl; cut in butter with pastry blender or two knives until mixture is crumbly. Sprinkle over batter.

BAKE for 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack.
