CALIFORNIA
ROAST
INGREDIENTS:
2-3 pound chuck roast
1 pkg onion soup mix
DIRECTIONS:
Place roast on large sheet of
aluminum foil. Sprinkle onion soup mix on top and fold the foil
tightly around it. Put in a baking pan and bake at 350 degrees for 2 hours.
NOTE: You can also surround
the roast with cut up potatoes and vegetables before closing up the foil.
NOTE: This can also be done
in the crockpot. Just toss everything in, sprinkle on the onion soup,
add ½ cup of water, turn it on low and go!

ROUND
STEAK PARMESAN
INGREDIENTS:
1 lb. round steak
1/2 cup flour
1 pkg sliced mozzarella cheese
1 jar thick spaghetti sauce
2 tbsp oil
salt and pepper
DIRECTIONS:
Slice steak into thin
individual serving pieces and dip them in the flour. Brown on both
sides in a heavy skillet with heated oil. Place in casserole dish
that has been coated with non-stick spray, making sure the pieces do
not overlap one another. Lay mozzarella slices on top of steak, and
spread spaghetti sauce on top of cheese. Bake at 350 degrees for one hour.

DOWN &
DIRTY MEATLOAF
I call it this because you
have to get your fingers down in the "heart" of the recipe
and mush everything around until thoroughly mixed. Makes your hands
feel icky and sticky, but it sure does taste good!
INGREDIENTS:
2 eggs
½ cup water
½ cup ketchup
1½ - 2 pounds lean
ground beef
1 cup stuffing mix or bread crumbs
1 pkg. onion soup mix
1 can Italian-style tomato
sauce (optional)
DIRECTIONS:
In a large bowl, beat the two
eggs. Then add the water and ketchup and stir well. Put the ground
beef in the center of mixture, dump stuffing (or bread crumbs) and
onion mix on top and start mushing. Don't be squeamish - do a good
job until all of the liquid is mixed together well with the ground
beef. Then put your mush mixture into a loaf pan and bake at 350
degrees for an hour.
OPTIONAL: Heat up the tomato
sauce and serve on the side to be ladled over the sliced meatloaf.

TOTALLY
EXCELLENT POT ROAST
INGREDIENTS:
2-3
pounds chuck roast
1
tsp minced garlic
1
/2 tsp lemon pepper
1
/4 tsp ginger
1-2
tbsp oil
1
cup beer (room temp)
1
/4 cup soy sauce
1
tbsp Karo light syrup
DIRECTIONS:
Rub
garlic, lemon pepper and ginger into the roast. Then brown roast in
the oil that has been heated in a skillet. Put roast in a casserole
dish and pour remaining ingredients: beer, soy sauce and syrup into
the skillet and gently stir together. Turn off burner before
ingredients start to boil, scrape the skillet and pour everything
over the roast. Cover the casserole dish and cook at 325 degrees for
2 hours. Note: After cooking, you can thicken the sauce and turn it
into a delicious gravy.
NOTE:
To make in crockpot, follow instructions above, except put in
crockpot (not casserole dish) and cook on LOW for 6-8 hours.

SIMPLE
SALISBURY STEAK
1
can cream of mushroom soup
1
lb. hamburger
1/2
c. dry bread crumbs
1
egg, beaten
1/4
c. onion, chopped finely
1
1/2 c. sliced mushrooms (optional)
Mix
together 1/4 c. soup, hamburger, bread crumbs, egg, and onion. Shape
into 6 patties. Cook patties in skillet over medium heat until brown
on both sides. Drain fat. Remove hamburgers from skillet, and add
remaining soup and mushrooms, stirring well. Return hamburgers to
skillet and reduce heat to low. Cover and simmer 20 minutes or until done.

THINGS
TO DO WITH MEATBALLS
I
typically buy my meatballs already prepared in the frozen section of
my grocery store. However, if you would like to make them fresh, and
perhaps freeze them for later, here is a good recipe:
MEATBALLS
1
lb. lean ground beef
1
egg
½
cup dry seasoned Italian bread crumbs
1
tsp. onion powder
salt
& pepper to taste
Mix
together all of the ingredients and form into 1-inch balls. You can
even use a large melon scooper (or ice cream scooper if you prefer
larger meatballs).
SKILLET
METHOD:
Heat
2 tbs. oil in a large skillet and lightly brown the meatballs on all sides.
MICROWAVE:
Cook
on HIGH 4 - 6 minutes; rotating dish halfway through.
OVEN
BAKE:
Bake
meatballs in a roasting pan for approximately 25 minutes at 375 degrees.

MEATBALL
RECIPE IDEAS:
SPAGHETTI
SAUCE: Heat a large jar of spaghetti
sauce, add 1 lb. meatballs and serve over your favorite pasta.
MEATBALL
SUB: Using the instructions above,
instead of pasta, pour the meatball sauce over sub buns, adding
mozzarella cheese and toasting in the oven until the cheese is melted.
BBQ
MEATBALLS: Dump a bottle of your
favorite BBQ sauce in the crockpot, add the meatballs and simmer for
several hours. Serve with rice or noodles.
SWEET
& SOUR: In a large skillet, simmer
meatballs in your favorite sweet and sour sauce, along with onion
wedges, green pepper wedges and pineapple chunks.
SWEET
& SPICY: Mix together a bottle of
chili sauce (12 oz.) and a jar of grape jelly (10 oz.) in the
crockpot; add the meatballs (1 lb.), and let simmer until heated.
Great appetizer!
SWEDISH
MEATBALLS: In a skillet, mix together
1/2 cup water, 2 tbsp. flour (more if needed to thicken), 1/2 pkg.
dry onion soup mix, and 1 cup sherry wine. Add meatballs and let
simmer approximately ½ hour.
MEATBALLS
& MUSHROOM GRAVY: Mix together 1
(10 ¾ oz.) can condensed mushroom soup, 1 cup water, and 1 (4
oz.) can sliced mushrooms in a medium-sized skillet. Add 1 lb.
meatballs and simmer uncovered on low for approximately 15 minutes,
stirring occasionally.
